*CONTEST* Enter NOW!! This Is The NACHO Recipe Contest!

Hi Everybody!

The Super Chef has been offline for a while. So to celebrate our (late) return in the New Year, the
Super Chef has come BACK with a hunger for NACHOS! So for this Recipe Contest I demand an offering of nacho recipes! I know they're out there people - so don't hold back. I don't care how elaborate or simple the recipe is, as long as it's yummy and, here's the kicker - HEALTHY. Yup, send in some healthy, happy nachos.


The WINNER with the cheesy nacho goodness wins a copy of Rachael Ray's 30-Minute Get Real Meals. This book shows you how to make meals that are healthy but not tasteless. 30-Minute Get Real Meals holds over 150 recipes for a low carb alternative to our all time favorites, some new classics, and even desserts! Why give up on carbs when you can enjoy them?

  1. Hm... I have a nacho recipe, but it's far from healthy... :P

    I'll give it a try, tho'...

    1 package taco seasoning
    1 package chili seasoning
    1 package ground turkey or chicken
    1 large package light cheese product (i.e. Velveeta)
    1 large bag of reduced fat shredded cheese
    3-4 blocks of reduced fat cheese
    fat free sour cream
    1 can sliced black olives
    1-2 large jars of salsa

    Cook the meat fully in a large pot, adding the seasoning so the meat gets all extra tasty from it. While the meat's cooking (stir it as needed), cube the non-shredded cheeses and cheese product. Add the salsa to the pot of meat and add the cheese gradually, allowing it to melt. Black olives may be added (or other vegetables, if you prefer). Allow it all to cook until the sauce is nice and creamy. If it's too thick, adding some skim milk can help thin it a bit. If it's too thin, try adding some of the fat free sour cream.

    Once it's all well blended and melted, spoon it over your favorite tortilla chips and top with the fat free sour cream as you like. It's pretty simple, but the cheese adds up, so be aware. This can be scaled back for single servings or whatever, but it's best for parties and such.
