Hm... I have a nacho recipe, but it's far from healthy... :P

I'll give it a try, tho'...

1 package taco seasoning
1 package chili seasoning
1 package ground turkey or chicken
1 large package light cheese product (i.e. Velveeta)
1 large bag of reduced fat shredded cheese
3-4 blocks of reduced fat cheese
fat free sour cream
1 can sliced black olives
1-2 large jars of salsa

Cook the meat fully in a large pot, adding the seasoning so the meat gets all extra tasty from it. While the meat's cooking (stir it as needed), cube the non-shredded cheeses and cheese product. Add the salsa to the pot of meat and add the cheese gradually, allowing it to melt. Black olives may be added (or other vegetables, if you prefer). Allow it all to cook until the sauce is nice and creamy. If it's too thick, adding some skim milk can help thin it a bit. If it's too thin, try adding some of the fat free sour cream.

Once it's all well blended and melted, spoon it over your favorite tortilla chips and top with the fat free sour cream as you like. It's pretty simple, but the cheese adds up, so be aware. This can be scaled back for single servings or whatever, but it's best for parties and such.

OooOooOooh! Love it! Turkey is healthy, cheese is healthy, salsa has vegetables in it - who cares as long as it's delicious first and foremost? Thanks for your input! You'll be entered to win this Reader Give Away for sure!
